cove and beaad along sheerline?

I am building a Guillemot as per the instructions in nick's book and I am wondering if it wouldn't be easier to put the two halves back togetherat the end if I use cove & bead strips along the sheerline. I realise that they would be a bit more fragile. Has anyone done this? Any advise?
