I saw an interesting tool last weekend at the Prt Townsend Wooden Boat Festival. A fellow was using it to rough out the spine on the blade of a Greenland paddle. It works like a drawknife, but has an oval, almost round profile, and was REALLY sharp. It had a long, 2-handed handle, so was very controllable, and did a lot of work in a hurry. Looks like a much more controllable alternative to a 5" angle grinder. I was told that the tool in question was made by a local artist whom nobody around could remember, that they were custom-built, and that 4 of them had been on order for a long time, so they must be somewhat rare. Woodcraft lists one, shown below. The short handle could be replaced easily with a longer one for better control.
