Sailing rigs for kayaks

I was just reading the Watertribe Challenge, and I was curious about some sailing rigs. I had some thoughts about possible rig options.

1. CLC type trimaran rig. I think that a Vanguard escape or similar rig where roller reefing is possible.
2. Two long Kayaks joined with one of several rig options...

A. Twin unstayed rigs as described above

B. Large, reefable catamaran rig either sloop or uni.
3. Custom stitch and glue cat or tri with either of the above rigs.

None of these ideas are new, but which one might have the greatest speed potential? Any other good, speedy ideas?
