Actually, Kajaksport of Finland makes one of the nicest ones I've seen that is available commercially. A knee tube is a tube or u-shaped box, about 4" in diameter that is glued or tied in under the peak of the foredeck. Some are water tight, some not. It's like a glove box for your boat.

The Kajaksport ones can be glassed in, and the sides of the knee tube used like additional knee hook support. It has a 4" Kajaksport rubber hatch that keeps the inside contents dry.
