At this point I just want to get the boat finished in the simplest way possible.

It sounds like you have a good plan- it should work fine.
BTW, those sheer clamp ends make great 'stop blocks' for setting the bulkheads in position.
If you are thinking about possibly glassing over the sheer clamps, using triangular section (or coved) clamps will make the glassing much easier.
Most strip boats are built a lot stronger than production glass boats, so no worries on that account.
I've seen glass boats (many) with no outside glass taping at all (using a vinyl H channel instead, and just glassing on the inside).
On some others, the outside glass tape is mostly cosmetic - set in a thick bed of gelcoat.
Have a look at this video of work on an NDK Romany. The inside tape has been ripped off by hand and a section of the outside tape is also pulled off once it is scored with a utility knife:
