Sounds like you have a canoe with a hull shape (the stations) and no deck shape (stations just have a foot down to strongback.

So, when you flip the hull over, no deck shape to strip.

Is your canoe a solo? Will it be fiberglassed?

Do you want partial decks like this?

To make a deck shape all you need to do is the make one round form, you could actually take on of the hull shapes nearest where you want your partial deck to end near the canoe center, and lay a few sticks from there to the bow and make a couple intermediate forms from cardboard to fit. Then make plywood forms from the cardboard templates to support your strips. Then strip the decks as you did for the hull.
