f an external fitting is OK - what have people had success with? The basic padeyes are kind of ugly, but functional I suppose. What about something like a fairlead? There's a few options for those - a bit more expensive though. Or a stainless eyebolt type thing? I assume with any of these I'd want a good backer plate or washer to avoid point loads. Also, how many do I need? I do plan on installing perimeter lines, plus the usual hold-downs.
How many you need depends on your layout. Take a look at a bunch of commercial kayaks and see what would work for you. I like to then take the plan view of the kayak and sketch different ideas.
A simple loop of flat nylon webbing held with screw works really well. On this kayak I made two loops: one for the bungees, the other for the perimeter lines. I used a #10 truss head screws held by fender washers and lock nuts (where I could reach). T-nuts also work. You can run a wire through them and pull them in from the top. If you have sheer clamps you can screw directly into them with a wood screw.
For ease of installation I also like the black plastic KajakSport deck fittings. They're held with a #10 flat head bolt.
You can also make your own padeyes and just epoxy them to the deck. I've made them out of wood and also carbon fiber. I like to bond them after clear coating. Sand each spot down to the fiberglass. Here are the carbon versions on my daughter's little Akta-14 baidarka):
