I'm not sure how that would hold up with hot pans cutting etc. Another thing to consider, actual butcher block tops. you could router and inlay a pine accent. IKEA has 'em for pretty cheap, I just re-did my daughters lower cabinets and used that.

that is for 8' of counter top, ~$60 so pretty cheap and easy way to go.

I treated the top with mineral oil so it won't turn rancid as vegetable oils can.
