The differences are in edge durability and reduced chatter with the thicker, stiffer blade and chip breaker. Older Stanley blade hold their edge reasonably well - though not as well as a Hock - but newer blades are pretty poor. The stiffness and extra weight of the Hock parts makes the plane feel much more solid and the surface quality it produces (assuming a well tuned and sharpened plane) is exceptional. The overall difference is pretty substantial, even compared to old Stanley "Sweetheart" blades.

Whether it's worth the money is a personal decision. I would tend to use them on planes that have blades that are either worn too short and are due for replacement or are too badly pitted to salvage.
