Caught the tail end of a pool session a couple years ago at Canoecopia, the guy whom I forget was repeatedly rolling his canoe, over and over, sans float bags, impressive.

Though others have mentioned that once you get it over the first time and keep it moving the momentum of all that water moving helps much in doing repeated rolls, still it's a very wide boat :)
