The bags have a textured side to let the air excape, the epoxy squesses out to the edges of the bag. I is good to use your hands to squeegee as much out before you put it in the bag. This also helps to remove any boubbles under the carbon, and restretch the fabric.

As for the food saver, as soon as it presureizes (or depresurizes however you want to look at it) it seals the bag. So I just give it about 10" of extra bag on the end and the epoxy never even gets close to the Food Saver.
