I'm not sre why you put off glassing the outside of the hull this long, but do it first. Once the outside is glassed, you can match up the deck to it, and trim around the edges with a plane to get a good match. You might even glass the outside of the deck, too. As long as you do your matchup while the resin is still "green" and not completely cured hard you can cut it with a plane. You'll need to clean up the edges before mating the two piece, so now is a good time to check the fit. As long as you don't glass the inside, the boat will still go back over the forms. Once you have the knowledge that the parts fit when glassed on the outside, then glass the insides and put them together.
