When I built my SOF, I used ash for the 1/4 X 1-1/4 ribs. I only had access to kiln dried stock and the first go was a disaster. 50% breakage and I could not get tight bends. For the second round, I soaked the milled stock in water overnight. Big improvement, almost no tearout and nice tight bends. Either way, propper grain and a good flexable backing strip to help focus the bend where you want it make a difference. The other thing I discovered, is that a smaller steam box works better than a larger one. You want to get the wood hot, not wet. The steam just helps keep the wood from charing.

Good luck. Expect some breakag, have a good time and ignore everyone that says ribs are better grilled than steamed.
