The preferred way is to do it the fastest way: Just make a neat butt joint. As the hatch is tightened down the sealing foam compresses and pushes the ends of your joint tightly together. That will stop almost all leaks.

Bevels and overlaps call for cutting the foam at an angle. Doing that would give you a thinner and weaker end which would eventually wear, or pull off, spoiling the seal.

Keep it simple.
