If you want the ultimate finish, use 400 grit wet/dry sandpaper as an applicator for a coat of your finish. Dip the paper in it, then wet sand the surface. Wipe off the excess, then let it cure. If you want, you can apply another coat in the normal manner after the sanded coat cures. The result is an incredibly smooth finish. Unfortunately, it's still gonna' get beat up when you use it.
