Hi Eric
I recommend Tom's Sea Rider or Rolldarka for you - they will fit you fine, just as they are, and both are excellent boats. Both, in my opinion, handle better than the Sea Rover. You will be slopping around inside a Sea Tour or Sea Bee (which are no less complicated to build than a wooden framed Sea Rider), and you'd likely be much happier with the other boats. I've built all of these, except the Sea Bee.

Exterior plywood truly sucks these days, for the most part. You would be much, much better served using MDO, which is still cheap, widely available, and of excellent quality. Any lumber yard can order you some, usually for no extra charge.
