Hi Nick,
Wait a week at least before varnishing. The epoxy is still curing. You can speed it up a bit by putting it in a warm place, best out of the sun.
You can paddle it without varnishing for a short while. If you do, don't sand it yet. When you decide to varnish you will have to wash it thoroughly with hot water and detergent first and then sand it in preparation for the varnishing. You can wet sand with wet and dry sand paper immediately after washing it. Then let dry thoroughly before varnishing.
