I glass outside on my porch, and I have more problems with wind blowing the cloth, and litte bugs I've always called "sweat bees" that seem to be attracted to the sweet-smelling epoxy. Luckily their little legs sand out quite easily, poor little fellas.

That said, I somewhat agree with the above response- you could sand out small particles. However, I have been in some shops that have such bad dust that it settles in short time and it's everywhere. Heavier particles are going to sink deeper into the epoxy and that means sanding even more, and on your first coat it might mean sanding into the cloth. Perhaps you could schedule to epoxy late at night when the shop isn't being used and there's less dust. That way it can also have overnight to cure without people "messin' with it."

For the varnish, definately find a better place- maybe just take it outside away from all the debris. I have done large items outside but where I live storms pop up rather quickly, and it seems like Murphy's law is never on my side with that. On the sunniest nicest day once I had a sudden huge black cloud come and ruin my epoxy job!
