Hey:

I'm only a few steps behind you on my Gentry Disko Bay. I went with the plywood coaming because I was too lazy to do the laminated. But in hindsight the laminated would've been less work and cheaper. C'est la vie!!

I'm going with a baseplate and stanchions but will be sewing the skin to the coaming. I have not decided if I will let the coaming simply rest on the baseplate or whether I'll peg it down.

You're going to need at least 1/2" of a lip to hold your skirt. On the two boats I've built, mine are about 5/8 and they hold great.
