Although I've yet to use it, I got an old original Windsurfer with two sails with little use on Craigslist for $30 for the whole thing, owner was moving. Couldn't turn it down.

These boards have a centerboard in them, would be relatively easy to use that board in the yak so you wouldn't have to shape it. Barge of a windsurfer but should make a really nice doner for a sailing kayak :)
