Using a very high grit (1500/2000) to make a surface perfectly smooth for polishing. When auto's are painted, the paint usually has a little texture, called "orange peel". For a perfect finish, you do a final sanding, and then polish. Hence the term "color sanding" as it tends to "bring the color out" of the finish.
