I agree with you on the Chuchanut 12. Given the dimensions, set of float bags is really the solution. For the SeaBee, you can certainly use a seasock.

A seasock is almost exactly what it sounds like; it is a sock that slides down inside the cockpit and prevents water from entering the boat. It does nothing to keep the paddler dry, but if properly installed should keep the boat from flooding. This page has a pretty good description.
