Ideas:

If it is to mount on its side why not make it a half-model to save space since you will only see one side anyway. There's no reason why you can't scale your favorite design down a bit to fit the space. You could mount that against a large mirror. Personally I wouldn't clutter it up with deck fittings which spoil the slim elegance of a kayak IMHO.

However, what appeals to me and might appeal to the missis is an olde-style "girling canoe" complete with ribs, rivets (could be faux), decks, fancy seat for your lady to recline elegantly while she twirls her umbrella, an old wind-up gramophone and a cocktail cabinet to boot. OMG I must be a romantic.
