What a nice gift for your Dad. Dad's are special and it is a wonderful thing for a son to invest the time it takes to build a strip boat in order to express thanks for all the things Dad's do. Way to go!
The cockpit looks terrific for the intended purpose and a good old sponge for warm weather will take care of the drip.... And you are right about making a spray skirt as well..
