I could be wrong, but I think I recall someone using southern yellow pine for strips, and being very happy with the results. This was a while back, and the memory fades a bit. But even with the shortcomings you cite, it may still be an acceptable option.

The larger pieces of yellow pine sold for construction use (2x8 and 2x10 etc) tends to have fewer knots than smaller (2x4) cuts, so you can rip longer sections which are knot free, and then scarf them together for long, knot-free strips.

Generally the cure for weight is to go with thinner strips.

I get the various, generic white wood construction lumber called SPF (spruce, pine, fir) and use a few 1x4s or 1x6s when i am cutting my cedar. I use this cheaper wood for my setup and first few strips. Those strips are used for setting up the forms, wedges, and various other miscellaneous tasks during boatbuilding, allowing me to get more useful strips from the more-expensive cedar.
