Yo HAVE to have a honing guide like this:

There are many out there but you need a constant angle. The instructions will tell you what angle for planes and chisels.
I have a set of thin diamond stones and mounted them on a flat piece of wood with an edge around it to hold them in place and I can clamp it in my bench vise.
Having a stationary jig like that makes it really easy to work. Lube it with water because it will help keep them clean and open.
