I haven't found that to be true, actually....within the the range of thicknesses of plywood that make any sense at all for a kayak. Even 3mm (1/8") plywood is pretty stiff and strong. Mac50L (from New Zealand) has built and paddled un-glassed 1/8" (painted) plywood boats and reports that they stand up to a lot of 'wear and tear'.

Interesting. I suppose the word "strength" is an over-simplification, right? For example a thicker sheet of plywood will be more resistant to "flexing" when you push on it than a thinner one, but a curved panel is more resistant to "folding" than a flat one. So depending on the overall geometry, a hull with thicker but flatter panels might feel "stiff" when you push against the hull and yet be susceptible to snapping in half if it gets caught in a big wave, while another hull with thinner but curved panels could have some "give" and yet is "stronger" overall. And, of course, impact resistance and abrasion resistance could vary as well. I suspect there's a lot of engineering going into those boats - particularly the S&G designs.
