Other: Should I tack-and-tape a S&G kit?

Greetings, forum users. Feeding my interests of both kayaking and wooden boats, I'd like to try my hand at building a plywood kayak. S&G construction looks possible but I think I'd like to go with just tape/epoxy on the seams rather than do the full glass sheathing. Would I need to find a kit/pattern that's designed with tack-and-tape in mind or, can I go with any S&G kit/pattern? Also, is there a formula to determine the amount of epoxy I'll need for T&T construction? If it matters, the kayak kit/plan that inspired me is a 14.5' x 21" Greenland-style that only mentions S&G for construction. I'd use this for rivers, creeks and maybe a bay (perhaps touring of these). I am male of 5'6" in height and weigh 135 lbs. This particular design will allow me to carry 40 pounds of cargo.
