Years back I built a Chesapeake Cape Carles 17. The instructions called for just taped seams and totally coated with epoxy.
That said, the seams were taped with two layers of 9 oz tape inside and outside and as you suggested it was not multi chine. If I made that same boat today I would tape with two layers of 6 oz tape inside, one layer of 6 oz tape on the outside and 4 oz glass on the hull only.

That early boat has held up fine and I've hit rocks with no damage.
