Aargh. I'd thought I'd locked this decision down - I was ready to order the plans today, but now I'm back to square one.

You may have mentioned this already, earlier in the thread...
What's your paddling experience/skill level? Are you planning on taking instruction/lessons with your new boat?
What boats have you paddled? What conditions do you want to paddle in your new boat?
IMO, the answers can make a big difference when you are selecting a design, and choosing the details (deck safety lines, cockpit size, etc.) of your build.
For example, some (not a lot in my area) paddlers prefer a small cockpit where the knees are under the foredeck, but those cockpits are completely incompatible with some of the popular rescue and re-entry techniques being taught in classes.

As an aside: IMO, the 'deck height' doesn't have much to do with how 'dry' the boat is in waves - the buoyancy ('fullness') and shape of the bow tends to control the balance between 'submarine' and 'slapping' in waves. Example: the Current Designs Solstice has lots of foot room but is a notorious 'wet boat' in waves (and is also quite slow in rough conditions, partly because of that..), but is still one of the most popular of all the Current Designs boats. (Because most paddling is done in benign conditions??...)
