Does anyone know, or Is there a 'rule of thumb' to calculate how much extra weight the epoxy will add by adding the second layer?

The ideal woven fiber to resin ratio is about 1:1 by weight. So figure at least 9oz of resin would be used to wet out the cloth. Hand layups never reach ideal (vacuum bagging and infusion get close) so add an ounce or two (1:1.10 to 1:15 for hand layups).
