Deck lines are like a bicycle helmet. We are supposed to ride our bike in a safe, controlled manner. As a result, we will never crash, and don't need to wear the helmet. Right?

Furthermore, besides obvious rescue function, deck lines are an utility device that is helpful out of the water as well.
One of the places I kayak has a difficult launch. I slide the boat into/out of the water down a narrow stairway with obstacles on both sides. I do it using deck lines, otherwise I would not be able to launch in that (very beautiful) stretch of the river.

Finally, deck lines look "technical" and cool. They improve the visual appeal of the kayak.
