I found polyester fabric at at Dyson, Baidarka & Company in Bellingham, WA for a reasonable price. They sell 8 oz polyester plain weave (63") for $2.50/Ft. and 10 oz polyester plain weave (64") for $3.00/Ft. and shiipping is around $10.00. I think I'd just use the 8 oz. fabric. They also sell nylon and polyester fabric in weights up to 29 ounces. They also have a lot of information about both nylon and polyester fabrics that can be useful to builders who, like me, who have no experience using them.

My plans for building my kayak are nearing completion, but, I have a couple of other projects to get to before I can start my build. One of these projects will result in an inside area large enough to build my kayak so I don't have to be concerned with the weather and can work uninterrupted by rain. It will probably take me 4-6 weeks to get these projects done so my kayak probably won't be on the water before mid to late August…if that soon. I had almost decided to just buy a 12' Sun Dolphin Bali from WalMart when I was looking at the more expensive route of using nylon as a covering. But, what's the fun in buying something when I can build it? It wouldn't be the first time I spent more money building something than I would have by buying just because I love building things (boats, camping trailers, RC planes and airboats, truck toppers, utility sheds, decks, etc.). Besides, I believe in "Build it better yourself". Or, maybe, I just love to show off something that I created. BTW, I am 78 years old.
