If I am reading this correctly you took the hull off the strong back. If you have not glassed the inside of the hull ease it back on the strong back to stabilize your forms and true up the forms. If you have glassed true up the forms and run 3 strips on each side where the hull was and staple/hot glue them on the forms to hold them on place. The deck should have a lot less arch than the hull requiring less bevel as far as your rolling bevel goes. I would try cutting a 2-3 degree angle on the edge of each strip with the table saw and that should get you pretty close. I would not try to torture a flat section of glued up strips into a deck shape.
