I've used diamond stones (still use them for big chips), and water stones, and the 3M sheets work the best. They don't become untrue like a water stone, so you don't waste the expensive material at the ends, and they polish like a mirror, which I can't achieve on the diamond stones I've used. Japan Woodworker's prices are too rich for my blood, but the float glass from Lee Valley works great.
