I'd agree, the "standard" if there is one is more 3/16" than 1/4". I've used 1/4" one time and it's way harder to use and also quite heavy. 3/16" strips with 6 ounce glass still will be very strong. Personally I don't like full length strips, they are like trying to handle wet spaghetti, way limber for their length. Scarfing or butt joints work just fine, the wood is a core for the fiberglass, it doesn't necessarily have to be waterproof.

If Nick decided to include skeg plans I'd assume there is a reason, even more helpful for a new paddler than an experienced one.
