Wonderful wood selection! Have you though of using Sapelle instead of dyed okoume for the cockpit? That is what I used on my two strip builds and it accents the darker cedar wonderfully.

For Florida paddling, I find one layer of 4oz on the bottom with bow and stern rub strips to be sufficient. I buy 4x the length of the boat in whatever width required (30" for the PP). That will leave plenty extra. I like to buy from CLC because they will roll it which makes it much easier to handle solo. No doubt there are cheaper places to buy but they have great, fast service and have always done well by me.
