Take a look at the all wood flush-fitting fittings offered by Eric at Shearwater Kayaks. By using a cord and some imagination they can be epoxyed in place fittings in impossible to reach places on the ends of the deck. I have successfully used them to install fittings on the end of an assembled kayak.

With some simple router jigs it's possible to make wooden 'cups' and then add stainless bars across them. So it's definitely a home shop project.
They are strong and match well with a clear finished stripper.
A few evenings or a day on a weekend would make a bucket full.
Or they can be purchased from Nick (or Eric) - certainly good ways to spend money!
