Can anyone help me understand Tides?

OK guys, I really need some help. Have been mostly a flatwater paddler, have recently started coastal kayaking, mostly in Florida Bay (near the FL Keys). When I enter Everglades Park, they hand me a tide chart. Frankly, I have on idea what the numbers REALLY mean and what effect they would have on my paddling. Do tides effect current? Is there a current off-shore. HELP!!!

I have reproduced an actual line(s) from this chart:

Florida Bay

Time of High and Low Water

With level in Feet above MLLW (Mean Lower-Low Water)
Sat Feb. 24 HI 3:45 AM 2.4 FT LO 11.57 AM -0.1 FT

HI 4:25 PM 1.9 FT LO 11:41 PM 0.1 FT

ALL i know is that if I get stuck in a shallow area in low tide, I am in big trouble!
