On my G, i just used a cedar strip as the outer stem (didn't even use an inner stem as the end pour gives plenty of strength). The cedar strip didn't extend up onto the deck. My guess is that this all depends on how neatly the strips on the deck fit together at the bow and stern. Mine fit nicely, and didn't need to be cleaned up with a stem covering - but if the fit isn't too good, then i would have covered over with a stem.
