In my case, i didn't have an inner stem, and the end pour ( a mixture of shredded close cell foam and epoxy) added strength to the bow and stern. I did the pour after attaching the deck and hull, by standing the boat up on end.
The structural foam sounds like it might do the job okay. Turns out due to the structure of the bow and stern, that part of the boat is already pretty strong.
