I built the Ches. 17LT and ran a piece of 'glass tape (the extra I had from the kit) from stem to stern and feathered with my random orbital. Yes, you can see a slight imperfection due to the extra thickness, but I can see it mostly on the very bottom that is underwater when you are paddling. If I were to do it again I'd feather it a little more with an extra layer of epoxy (while filling in the weave).

Put it on now. It will add minimal weight and you will probably need it because not every launch/landing will be beach or float based.
