We built 4 kayaks as a group project, using 4mm meranti. It is OK, solid as a rock and heavy, possibly produces a boat 1/4 to 1/3 heavier than a kayak using light plywood. Now for real light, my 3 mm tortured ply, 5 metre sea boat, at 17 kg ready for sea vs just under 30 kg for the meranti boat at 5.25 metres.

If weight doesn't matter, and it doesn't matter for a loaded boat then there should be no problems. We didn't have problems fitting the curved decks either.
