I haven't sold on e-bay, but so far I have built 4 S&G and sold 3 EASILY (I have to keep one to paddle). The initial total cost of the material was about $600/boat and the selling price was an average of $1100. I figure a profit of $500/boat isn't too high for a nice wood boat and isn't too low so I can't make a new boat of my own for "free" after selling a couple. Right now, another boat is on order, but I have to wait until the winter when I have more time. As far as liability, contact your lawyer... I'm covered up to $1M and the cost was minimal, but I also had the initial insurance for other reasons and adding the sale of kayaks only added a few extra dollars/year.
The short of it is: You can find the right person if you get the word out and you build quality boats.
