As long as the strip will lay fair on the sheer, the width of the strip shouldn't matter.
Thin strips are good for going around tight turns at the bilge and for making decorative designs that might have sharper bends. At the sheer a thin strip might be an advantage if the bow and or stern swept up quite a bit.
