Mike,
With this particular kayak sitka spruce was used for the light accents.
I have also used white pine with very good results. It should be noted that it is almost always necessary to be very particular about choosing the lumber that you are going to use. Spruce and pine can vary in shade from almost white to very yellow. Most of the time the pine or spruce will not be as white as you would like, and in fact may end up very amber - especially after epoxy and varnish.
