Maybe it adds some flexability to the paint? the main problem with paint on canvas is cracking. So maybe the linseed oil allows it to be less prone?
We used it at art school to mix with demar varnish and oil paint to create paint that flowed better and had a glassy look (glazes). Took forever to dry though so we had to add japan dryer if we were working fast or used thin coats built up.
