I did exactly as you're proposing -- installed Eric's flush fittings on my Arctic Tern. They look very slick and I would highly recommend them. You can squeeze up to 3 strands of bungee thru them.
This won't help you this time, but I installed the fittings before glassing the deck. I glassed right over the top of them, waited a day for the epoxy to cure somewhat, then cut out the two back-to-back d-shaped openings with an X-acto knife. So I actually have fiberglass and epoxy over the top of the pin.
