Hi Ryan,

Like the others have mentioned, you're on the right track with a sea kayak.

Speaking from a narrow range of experience (I have built only 2 kayaks), you may want to take a look at the Panache by Rob Macks of Laughing Loon. It's one of the boats I've built, and it is a very strongly tracking boat with minimal weathercocking.
