I have built a few Greenland paddles out of solid cedar. Some I did not apply any coating and others I applied MAS epoxy just to saturate the wood. On others I beefed up the tips with a couple of coats of thick epoxy. All of the paddles work well, but I prefer the ones with the saturated epoxy coating and beefed up ends. I like to feel the grain of the wood on my paddles and they don't become slippery when wet.
